Laura: Healthy Breakfast

At my previous job, I had a really great boss. She was really kind and supportive and I learnt a lot of things from her, not all was work related. She introduced me to the health food snacks on how to snack and enjoy food but still be healthy. Over the last few weeks, I’ve been looking into ways to eat healthily but get all the nutrients I need without having to take supplements.

Below are some of the healthy snacks I’ve been eating and how to make them.

Chia Pudding with Cacao and Maca powder

Half a cup of chia seeds

Half a cup of unsweetened coconut milk (can also use almond milk) 

Heaped teaspoon of raw cacao powder

Heaped teaspoon of Maca powder

Fruit to top

Place all ingredients in a cup or jar

Mix well and cover and leave to stand in fridge for a couple of hours or overnight

Serve with fresh fruit. Some people also like to add honey or agave nectar to sweeten

Overnight oats

1 Cup of Rolled Oats

1 heaped teaspoon of raw Cacao

½ teaspoon of cinnamon

1 cup of unsweetened milk (Coconut, Almond, Soya or Semi Skimmed)

Combine all in a bowl and leave overnight in the fridge

Add choice of Fruits I've tried

1. Strawberry, Blueberry, dried Mango and mixed milled seeds with Goji Berries

2. Strawberries, Raspberries, Chia Seeds and Flaked Coconut

3. Raspberries, Blueberries, Banana and seed mix

Chocolate Banana Smoothie

Half Frozen Banana

Half an avocado

Coconut Milk/Almond Milk

Heaped Teaspoon of Cacao

Pitted dates to sweeten (Can also use honey or agave nector)

Combine all ingredients in a smoothie maker and smooth.

While I’ve been eating healthily this is what my husband has been eating Choc Brownie and Vanilla Ice Cream!
